Make a soft dough by mixing all the ingredients for the covering and adding small portions of water at a time.
Once the dough is ready, cover it with a muslin cloth and keep it aside.
Now, for the stuffing, in a bowl add mashed potatoes and all dry masalas (salt, chili powder, mango powder, garam masala) and green chilles, ginger and Mix well.
After that add green peas, cashew nuts and raisins. Mix them well.
Finally add chopped coriander leaves and keep aside.
To make samosas :
Make small balls of the dough and roll them into a small circular chapattis.
Now cut them into two parts like a semi-circle.
Take one semi circle and fold it like into a conical shape. You may use water while doing so for sticking the edges together.
Now place a spoon full of the filling in the cone and seal the open side using water.
Heat oil in a deep frying pan and fry till golden brown. Use a medium flame for even cooking of the samosa.
