SAMOSA
INGREDIENTS-
for stuffing:
- Potatoes- 3-4 (boiled, peeled and mashed)
- Green Peas- 1/2 cup (boiled)
- Green Chilies- 1-2(finely chopped)
- Ginger- 1/2 tsp (crushed)
- Coriander Leaves- 1 tbsp finely chopped
- Dry Mango powder( Amchur)- 1/2 tsp
- Few chopped Cashew nuts
- Few Raisins
- Garam masala- 1/2tsp
- Red chili powder to taste
- Salt to taste
for outer covering:
- All purpose flour (Maida)- 1 cup
- Oil- 2tbsp
- A pinch of salt
- Ajwain (optional)- 1/4th tsp
- Water to Knead dough
METHOD-
- Make a soft dough by mixing all the ingredients for the covering and adding small portions of water at a time.
- Once the dough is ready, cover it with a muslin cloth and keep it aside.
- Now, for the stuffing, in a bowl add mashed potatoes and all dry masalas (salt, chili powder, mango powder, garam masala) and green chilles, ginger and Mix well.
- After that add green peas, cashew nuts and raisins. Mix them well.
- Finally add chopped coriander leaves and keep aside.
To make samosas :
- Make small balls of the dough and roll them into a small circular chapattis.
- Now cut them into two parts like a semi-circle.
- Take one semi circle and fold it like into a conical shape. You may use water while doing so for sticking the edges together.
- Now place a spoon full of the filling in the cone and seal the open side using water.
- Heat oil in a deep frying pan and fry till golden brown. Use a medium flame for even cooking of the samosa.
- Once ready, serve hot with chutney.
